Cupcakes de limón!!

¡¡Como podéis ver seguimos con los cupcakes!!
¡¡Y esta vez os traigo unos muy, muy pero que muy veraniegos!!

¿¿Adivináis de qué?? 

Sí, correcto, de LIMÓN!!

Primero de todo, este post se lo dedico en especial a mi hermana mayor Núria que le encanta el limón y con ello todos los postres que lo llevan y que ahora está de exámenes!!!Ánimo a todos los estudiantes que esto ya se acaba!!! 

A decir verdad el tiempo no está acompañando mucho estos días, quién diría que ya estamos casi a junio!! Y es que con el tiempo tan raro que está haciendo me he resfriado así que ahora mismo sólo me apetece una sopa bien calentita y tumbarme con una manta en el sofá... 
Aun así al ver estas fotos se me abre el apetito!!!
CUPCAKES DE LIMÓN
Ingredientes (Receta de Maite's Sweet Food) (Para unos 12 cupcakes)
Para el cupcake:
  • 110 gr de mantequilla sin sal
  • 225 gr de azúcar
  • 2 huevos
  • 250 gr de harina
  • 1 cucharadita y media de levadura
  • 100 ml de leche
  • Zumo de medio limón
  • Ralladura de limón 
Para el frosting:
  • 200 gr de queso crema tipo Philadelphia
  • 150 gr de azúcar glass
  • 120 gr de mantequilla a temperatura ambiente 
  • Unas cuantas gotas de zumo de limón
Para empezar preparamos las cápsulas de papel en un molde y precalentamos el horno a 180ºC.
Tamizamos la harina y la levadura, la ponemos en un bol y la reservamos. A continuación, batimos la mantequilla con el azúcar y cuando esté todo bien integrado cogemos los huevos y los añadimos uno a uno y lo mezclamos todo bien. Después, añadimos la mitad de la harina y la levadura y de la leche. Repetimos la acción otra vez y luego añadimos el zumo y la ralladura de limón.

Una vez tenemos la masa hecha, llenamos 3/4 partes de los paper liners y metemos los cupcakes en el horno durante unos 20 minutos aproximadamente a 180º.

Para comprobar si están hechos los cupcakes podéis pinchar uno con un palillo y si sale limpio es que ya están hechos.

**RECOMENDACIONES: Para llenar las cápsulas podéis usar una cuchara apiladora.
Y un truco para el horno: poner el molde en la rejilla no en la bandeja del horno, sino se os puede requemar el molde. Y encender sólo la parte de abajo y cuando estén hechos los cupcakes, si queremos que estén tostaditos podemos encender un par de minutos la parte de arriba del horno y quedaran monísimos, eso sí, vigilando constantemente!!!

Para hacer el frosting, primero de todo cogemos la mantequilla, recordad que es importante que ésta esté a temperatura ambiente y la mezclamos con el azúcar glass.

**RECOMENDACIÓN: Al batir la mantequilla con el azúcar acordaros de tapar con un paño de cocina el bol para no poner perdida de polvo la cocina. ;)

Luego añadimos el queso crema y el zumo de limón a la mezcla y seguimos batiendo hasta que esté perfectamente integrado todo.


Una vez acabado, cogemos nuestros cupcakes y el frosting, los decoramos y... a comer!!!

This cupcakes are fantastic, you can do them for any special ocasion or whenever you want and you'll impress everybody and enjoy a lot!! =)

LEMON CUPCAKES
Ingredients (This recipe makes 12 cupcakes)
For the cupcake:
  • 110 gr of unsalted butter
  • 225 gr of sugar
  • 2 eggs
  • 250 gr of flour
  • 1 and 1/2 teaspoon of baking powder
  • 100 ml of milk
  • Juice of half lemon
  • Lemon zest
For  the frosting:
  • 200 gr of Philadelphia
  • 150 gr of icing sugar
  • 120 gr of butter at room temperature
  • A few drops of lemon juice
First of all, we put 12 paper liners in a mold and we preheat the oven to 180 ºC.
Sieve the flour and baking powder, put in a bowl and reserve it. Then, we beat the butter with the sugar and when all it's well integrated we add the eggs one by one and mix everything well. Then add half of the flour and the baking powder beat and add half of the milk. We repeat the action again and finally add the lemon juice and the zest.

Once we have finished, we fill 3/4 parts of the paper liners and we put the cupcakes in the oven for about 20-22 minutes at 180ºC.

To check if the cupcakes are done you can sink a toothpick into a cupcake and if it comes out clean, it means that the cupcakes are made.


**RECOMMENDATIONS: To fill the cupcakes you can use a  ice cream scoop.
For the oven: put the mold on the grill not on the baking sheet because it can scorch the mold and I only turn on the under part of the oven but if you want them to be toasted you can turn on (when the cupcakes are made and only for a few minutes, constantly watching) the top part of the oven.

To make the frosting, first of all we take the butter, remember it is important that it is at room temperature and mix with the icing sugar.


**RECOMMENDATION: When you beat the butter with the icing sugar remember to cover with a towel the bowl otherwise you will dirty all the kitchen!! ;)


Then add the cream cheese and lemon juice to the mixture and continue beating until they are completely integrated.


Once finished, we take our cupcakes and the lemon frosting, decorated them and ...they are ready to be eaten!!
