London cupcakes (2): Blueberry and white chocolate cupcakes!!

Como veis sigo aquí en Londres y como no, os traigo más CUPCAKES!!

Primero de todo quería contaros que ayer fui a un workshop de cupcakes aquí en Londres, en el workshop decorabamos 6 cupcakes que nos llevábamos más tarde a casa.
Fue estupendo porque puse en practica mi inglés y aprendí técnicas para decorar además de algún que otro consejito para los cupcakes!!

La verdad es que quedaron preciosos cuando acabe pero... sí, en todo tiene que haber un pero, no se me ocurrió nada más que irme a visitar cosas con el calor que hacia, sí, justo ayer hacia muchisimo calor. Pues claro, os podéis imaginar como estaban mis cupcakes una vez llegué a casa después de pasearme arriba y abajo con ellos.

Sí.
Llegaron un poco, bastante deshechos!! jajaja
Aunque me da mucha pena, ya me faltan muy pocos días para volver a casa así que, como buena pastelera he ido al supermercado y he cargado mi maleta de material para hacer más y más postres!! Cupcakes, cake pops, muffins...

Además por supuesto de comprarme un libro sobre cupcakes, esto sí que no en el super!!jajaja

¿¿Sabéis que más??
Otra cosa muy positiva de aquí es que venden frutos silvestres en el mismo supermercado todo el año son muy, muy fáciles de encontrar!!!
Arándanos, frambuesas, moras, fresas, grosellas... 


Por eso y porque están de rechupete, seguimos con los frutos silvestres, la idea de esta receta la saqué de un libro que me quería comprar de cupakes, la idea me encantó, el libro al final no me lo compré y  elegí otro!!jajaja 
Pero esta es mi versión de los cupcakes!! ;)

BLUEBERRIES AND WHITE CHOCOLATE CUPCAKES
Ingredientes (Receta de Maite's Sweet Food) (Para exactamente 12 cupcakes)
Para el cupcake:
  • 70 ml de aceite
  • 145 gr de azúcar
  • 2 huevos
  • 145 gr de harina
  • 1 cucharada de leche
  • 1 y 1/2 cucharaditas de levadura
  • Blueberries (arándanos)
  • 34 gr de chocolate blanco con trocitos
Para la buttercream:
  • 150 gr de mantequilla a temperatura ambiente
  • 150 gr de icing sugar
  • 60 gr de chocolate blanco deshecho
  • 1 cucharadita de extracto de vainilla
  • 1 cucharada de leche
Para empezar como siempre precalentamos el horno a 180ºC y preparamos nuestros 12 paper liners o cápsulas de papel en nuestro molde de cupcakes.

Luego, cogemos el aceite y lo batimos con el azúcar. Cuando estén integrados añadimos los huevos uno a uno y batimos y  a continuación agregamos la mitad de la harina y la levadura, batimos de nuevo, luego la cucharada de leche y la otra mitad de la harina.
Cuando tengamos la masa homogénea añadimos el chocolate y los arándanos y lo mezclamos todo con la ayuda de una espátula.


Una vez tenemos la masa hecha, llenamos 3/4 partes de los cupcakes liners o cápsulas de papel y los metemos en el horno durante unos 20-22 minutos aproximadamente a 180ºC.

Recordad que para comprobar si están hechos los cupcakes podéis pinchar uno con un palillo y si sale limpio es que ya están hechos.

**RECOMENDACIONES: Para llenar las cápsulas podéis usar una cuchara apiladora.
Y un truco para el horno: poner el molde en la rejilla no en la bandeja del horno, sino se os puede requemar el molde. Y encender sólo la parte de abajo y cuando estén hechos los cupcakes, si queremos que estén tostaditos podemos encender un par de minutos la parte de arriba del horno y quedaran monísimos, eso sí, vigilando constantemente!!!


Para preparar el buttercream lo primero que hacemos es derretir el chocolate blanco en el microondas y lo reservamos.
Colocamos en un bol la mantequilla y el icing sugar (recordar que la mantequilla debe ser siempre a temperatura ambiente) y lo batimos. Cuando esta todo bien unido incorporamos el chocolate blanco deshecho y batimos unos minutos más. Luego, la cucharadita de extracto de vainilla y si nos hace falta la leche (si veis que os gusta la textura de éste no hace falta que la pongáis). 

**RECOMENDACIÓN: Cuando mezcléis con la batidora el azúcar glasé y la mantequilla, tapar con un trapo seco de cocina el bol para no poner la cocina perdida de azúcar!!

Para finalizar podéis poner el buttercream en una manga pastelera, decorar los cupcakes y el toque final es poner arándanos para decorar los cupcakes encima!!! Están de rechupete!!

BLUEBERRIES AND WHITE CHOCOLATE CUPCAKES
Ingredients (For exactly 12 cupcakes)
For the cupcake:
  • 70 ml of oil
  • 145 gr of sugar
  • 2 eggs
  • 145 gr of flour
  • 1 tablespoon of milk
  • 1 and 1/2 teaspoon of baking powder
  • Blueberries 
  • 34 gr of chopped white chocolate
For the buttercream:
  • 150 gr of butter at room temperature
  • 150 gr of icing sugar
  • 60 gr of white chocolate melted
  • 1 teaspoon vanilla extract
  • 1 tablespoon milk
We preheat the oven at 180ºC and prepare our paper liners in the mold. 
After that, we sieve the flour and the baking powder and keep it apart. 
Then, we beat the oil with the sugar till their are well integrated. Once we have done that, we incorporate the eggs one at a time and continue beating. Once is all we integrated, we add half of the flour, beat and then add the milk and beat. And when we have finished we add the other half of the flour.
Finally, we add the blueberries and the white chocolate and the blueberries and we stir with a spatula and then we fill 3/4 parts of our paper liners.

At last, we put the mold in the oven at 180ºC during 20-22 minutes. 
To check if the cupcakes are done we can we can sink a toothpick into a cupcake and if it comes out clean, it means that the cupcakes are made.


**RECOMMENDATIONS: To fill the cupcakes you can use a  ice cream scoop.
For the oven: you should better put the mold on the grill and not on the baking sheet because it can scorch the mold. And I only turn on the under part of the oven to bake them. And if you want them to be toasted you can turn on (when the cupcakes are baked and only for a few minutes, constantly watching) the top part of the oven.And the cupcakes will look awesome!!

To prepare the buttercream we melt the white chocolate in the microwave and reserve it.
We put in a bowl the butter and the icing sugar and beat it (remember that the butter has to beat room temperaure). When all is well integrated we add the melted chocolate and beat a few minutes more. Then, we add the vanilla extract, beat and the milk and beat a bit more. Not too much because then the buttercream will be very liquid. Once the buttercream is finished we put it in a pastry bag and use it to decorate our cupcakes.

**RECOMMENDATION: When you beat the butter with the icing sugar remember to cover the bowl with a towel otherwise you will dirty all the kitchen!! 

To give them the perfect touch we put on top some blueberries and they are ready to be eaten!!
