Vanilla cupcakes with chocolate cream cheese frosting!!

El otro día como no había empezado la universidad, invité a dos amigas a casa para ponernos al día, explicarnos aventuras del verano, etc...

Así invité a Dolors y a Berta, dos de mis amigas del colegio, y les hice unos super cupcakes de vainilla con chocolate cream cheese frosting!!!

La receta de vainilla es la clásica, la normal y el frosting es una receta de Donal Skehan. Por si no lo conocéis os lo cuento, es un joven cocinero irlandés que hace recetas super sencillas y deliciosas!!

Pues, él, a parte de escribir libros, tener un blog y de más, participa en The Great Irish Bake. Es una iniciativa para recaudar dinero para un hospital infantil, podéis entrar mirar y donar si queréis!! 
De allí es de donde saqué la receta del frosting, él la usó para acompañar el brownie pero con los cupcakes queda igualmente de maravilla, os lo aseguro!!! 
Además como podéis ver en la web hay más recetas que podéis hacer!! 
Pero como no, antes de empezar os pongo la canción del post, hoy os propongo esta: Don't Speak - No doubt, espero que os guste!!!!!

CUPCAKES DE VAINILLA CON CHOCOLATE CREAM CHEESE FROSTING
Ingredientes (Receta de Maite's Sweet Food) (Para exactamente 12 cupcakes)
Para el cupcake:
  • 70 ml de aceite
  • 145 gr de azúcar
  • 2 huevos
  • 145 gr de harina
  • 2 cucharadas de leche
  • 1 cucharadita de extracto de vainilla
  • 1 y 1/2 cucharaditas de levadura
Para el frosting:
  • 50 gr de mantequilla a temperatura ambiente
  • 225 gr de crema de queso tipo Philadelphia
  • 160 gr de azúcar glasé
  • 25 gr de cacao en polvo
Precalentamos el horno a 180ºC y preparamos las 12 cápsulas de papel y tamizamos la harina y la levadura y la reservamos en un bol. 
Cogemos el aceite y lo mezclamos con el azúcar hasta que se integren y quede una mezcla blanca. Añadimos los 2 huevos de uno en uno y batimos hasta que se incorporen. 
A continuación, agregamos la mitad de la harina y la levadura que habíamos preparado antes y batimos. Luego, la mitad de la leche y añadimos la otra mitad de la harina y la mitad de la leche. Finalmente, añadimos el extracto de vainilla y llenamos 3/4 partes de los cupcakes liners.

Por último, lo metemos en el horno durante 20-22 minutos. Para comprobar que estén hechas podéis pinchar los cupcakes con un palillo y cuando éste salga limpio ya están hechos.


**RECOMENDACIONES: Para llenar las cápsulas podéis usar una cuchara apiladora.
Y un truco para el horno: poner el molde en la rejilla no en la bandeja del horno, sino se os puede requemar el molde. Y encender sólo la parte de abajo y cuando estén hechos los cupcakes, si queremos que estén tostaditos podemos encender un par de minutos la parte de arriba del horno y quedaran monísimos, eso sí, vigilando constantemente!!!

Para el frosting, cogemos la mantequilla y el queso y los batimos hasta que se integren bien. Luego, añadimos el azúcar glass y el cacao en polvo hasta que tengamos la textura del frosting.


**RECOMENDACIÓN: Al batir la mantequilla y el queso con el azúcar glass acordaros de tapar con un paño de cocina el bol para no poner perdida de polvo la cocina. ;)

Decoramos y a comer!!

I hope you love cupcakes because here come, more cupcakes!!!!!!!
Last week, before I had started university I invited two friends to have lunch at home. We had a great time together talking about the summer and other stuff. 
So, Berta and Dolors, two of my school friends, came home and then I made for them vanilla cupcakes with chocolate cream cheese frosting!!!

The cupcake recipe is the classic one and the frosting is a recipe from Donal Skehan. 
In case that you don't know him; he is an irish chef. I love his recipes and he also helps in the The Great Irish Bake, that wants to get some money to help for an infantil hospital. 

You can find his recipe in the web of The Great Irish Bake and also some more dessert recipes, he used this frosting recipe to serve the brownie but with the vanilla cupcakes it tastes also amazing!! 

And at last but not least, the recipe of the post, Don't Speak - No doubt. I'm sure you know that amazing song!! :)

VANILLA CUPCAKES WITH CHOCOLATE CREAM CHEESE FROSTING
Ingredients (For exactly 12 cupcakes)
For the cupcake:
  • 70 ml of oil
  • 145 gr of sugar
  • 2 eggs
  • 145 gr of flour
  • 2 tablespoons of milk
  • 1 teaspoon of vanilla extract
  • 1 and 1/2 teaspoon of baking powder
For the frosting:
  • 50 gr of butter at room temperature
  • 225 gr of cream cheese like Philadelphia
  • 160 gr of icing sugar
  • 25 gr of cocoa powder
First of all, we take our paper liners and we put them in our mold and preheat the oven to 180 ºC.
Then prepare the cupcakes. We first mix the oil with the sugar and beat them well. When it's well blended,we add the eggs one by one and continue beating.
Once done, we add half the flour and the baking powder, beat and then add the milk beating all the time. Then, we add the other half of the flour and finally the vanilla extract.

Then, we fill 3/4 parts of our paper liners and we put the mold in the oven at 180ºC during 20-22 minutes. 
To check if the cupcakes are done we can we can sink a toothpick into a cupcake and if it comes out clean, it means that the cupcakes are made.

**RECOMMENDATIONS: To fill the cupcakes you can use a  ice cream scoop.

For the oven: you should better put the mold on the grill and not on the baking sheet because it can scorch the mold. And I only turn on the under part of the oven to bake them. And if you want them to be toasted you can turn on (when the cupcakes are baked and only for a few minutes, constantly watching) the top part of the oven.And the cupcakes will look awesome!!

To make the frosting:

We take the butter and the cream cheese and we beat till everything is well integrated. After that, we add the icing sugar and the cocoa powder and we beat till we have the frosting texture.

**RECOMMENDATION: When you beat the butter with the icing sugar remember to cover the bowl with a towel otherwise you will dirty all the kitchen!! ;)
